It seems that the field list is sorting the list of fields in alphabetic order based on their display name (caption).
Is there a way to prevent this? I’d like to display it in the order I have declared it in the datasource.

Yes, you are right. Currently, the fields can only be displayed in alphabetical order.
There is no option to change it.
